Cambridge Culinary Institute classes

I'm going to sign up for Back to Basics at the Cambridge Culinary Institute, Sunday January 4, 11, 18, 25, and Feburary 1, 8 from 10am-1:30pm each week. The weeks:

  • knife skills
  • eggs
  • stocks, soups, and salads
  • braising, stewing, blanquettes, and fricassees
  • roasting, grilling, and sauteeing
  • sauces
